When I think of Hellmann’s mayonnaise I think of Ham and Swiss on rye bread with Hellmann’s mayo, lettuce, onion and a bit of mustard. Mmm… I would never think of using Hellmann’s mayonnaise in recipes, especially in recipes that involved meat and poultry.
I heard about Hellmann’s Parmesan Crusted Chicken recipe. Hellmann’s is even talking about it on their Facebook page, www.Facebook.com/Hellmanns. The beauty of this recipe is that it only involves a few ingredients and it is so quick and easy to make. All you need is four chicken cutlets, Parmesan cheese, bread crumbs and of course Hellmann’s/Best Foods mayonaise.

Parmesan Crusted Chicken with Hellmann’s or Best Foods Real Mayonnaise
Serves: 4
Prep Time: 10 Minutes
Cook Time: Approx. 20 Minutes
Ingredients:
– 1/2 cup of Hellmann’s or Best Foods Real Mayonnaise
– 1/4 cup of grated Parmesan Cheese
– 4 boneless, skinless chicken breast halves (about 1 1/4 lbs.)
– 4 tsp. of Italian seasoned dry bread crumbs (or your favorite bread crumbs)
Instructions:
– Pre-heat the oven to 425 degrees.
– Combine Hellmann’s or Best Foods Real Mayonnaise with cheese in medium bowl. Arrange chicken on baking sheet. Evenly top with mayonnaise mixture, then sprinkle with bread crumbs.
– Bake 20 minutes or until chicken is thoroughly cooked.
Also terrific with Hellmann’s or Best Foods Light Mayonnaise or Hellmann’s or Best Foods Canola Cholesterol Free Mayonnaise.

TIP: Omit Parmesan cheese and have Magically Moist Chicken on table in less then 30 minutes.

I made this the other night for the first time. I took a picture of the chicken BEFORE I cooked it but neglected to take a photo AFTER it was done cooking. Ugh! Sorry about that.
Honestly, I was a bit “iffy” about cooking chicken with Mayonnaise. It just didn’t seem like it went together. WOW! Was I wrong. Not only was it ridiculously easy to make, it tasted fantastic too. The chicken was really moist and juicy. I think it’s because the oil in the mayonnaise helps to keep the chicken from drying out and helps to lock in the juices. The Parmesan was a nice touch too.
As far as dinners go this couldn’t be any more perfect. It’s quick, easy, tasty and inexpensive too.
Now I’m curious to see what other delicious things I can make using Hellmann’s or Real Foods mayonnaise.

This was delicious! We just had this for dinner tonight; perfect for days when I have to work at my office because it’s so quick. The flavor was great and chicken was so moist! Mr Mouse couldn’t figure out what was in it. But it’s definitely a keeper.

I have been useing hellmanns mayo on chicken breasts and thighs, for about 28 yrs. Just rince the chicken rub mayo with your hands a light coating on chicken. thighs or breasts.but italian bread crumbs in 1 gal zip lock bag. shake well about 15 to 20 secs. to get even coating. bake at 400 make sure that are cooked through . and injoy.. ALSO do rabbit parts with hellmanns… I can tell you this I would never eat anything but hellmanns. and i really mean that….
