Eggland’s Best Pink Ribbon Eggs (Giveaway)

October is Breast Cancer Awareness Month. I love that so many companies are doing their part to not only raise awareness of this horrible disease, but also to raise much needed funds too.

Did you know…

- Breast cancer is the most common cancer among women in the US, other than skin cancer and second leading cause of cancer death in women, after lung cancer.

- Right now there are more than 2½ million breast cancer survivors in the United States. That is amazing!

- Although you can’t control your family history, a healthy lifestyle is one of the best defenses against breast cancer.

- Exercise may help reduce breast cancer risk.  Research suggests four or more hours of exercise weekly may help reduce the risk of certain cancers, such as breast cancer – that’s just 35 minutes a day. Surely everyone can find 35 minutes a day to exercise, even if it’s just 10 minutes here and 5 minutes there.

I like to support companies that donate time, money and resources to charities. One such company is Eggland’s Best. Eggland’s Best is one of the suppliers of quality eggs that are found on store shelves across the country.

Eggland’s best has teamed up with the Susan G. Komen for a Cure Foundation.  Eggland’s Best will be donating $50,000 to Susan G. Komen for the Cure and, now through November 15, 2011. They have even gone so far as to include a pink Susan G. Komen for the Cure ribbon right along side the EB that is stamped on to the shells on all of their eggs.

In the past year, with the help of companies including Eggland’s Best, Susan G. Komen for the Cure has been able to invest an additional $75 million in research, as well as provide more than 600,000 women with free screenings and over 100,000 with treatment assistance. That is great news! As consumers we need to do our part to help support companies and products that help to raise funds for Breast Cancer awareness and research.

As I mentioned earlier, adopting a healthy lifestyle and diet is important to help reduce your chances of certain types of cancers. Enjoying foods that are low in calories and fat and high in protein, and Omega-3 fatty acids (the “good” kind of fat) will not only help you to lose weight but also to stay healthy. Eggland’s Best eggs supply you with protein plus two times more Vitamin D and Omega-3 fatty acids. Plus they give you 10 times more Vitamin E compared to other eggs. Diets low in Vitamin D have shown to have more aggressive types of cancers. Vitamin E has also been suggested to help lower your risk of Breast Cancer too.

My favorite ways to enjoy Eggland’s Best Pink Ribbon Eggs are with onions and peppers and with Salsa. 

Pan fry with a touch of Olive Oil some cut up red peppers, green peppers and onions just enough to make them slightly soft. In a separate bowl crack open some Eggland’s Best Pink Ribbon eggs (I use one whole egg and one egg white per person). Add a touch of milk to the egg mixture. Then pour the egg mixture into the pan with the veggies. Stir and move everything around until all the egg is scrambled and cooked.

Serve on rolls for a onion, pepper and egg sandwich.

Another favorite way to enjoy Eggland’s Best Pink Ribbon eggs are to prepare scrambled eggs (or an omelet) the way you normally prepare it and serve with a side of salsa. I love eggs and salsa. Yummy!
