Kraft Fresh Take Challenge #2 (recipe!) – Make something amazing tonight (and tomorrow too!) #KraftFreshTake

I was asked by Kraft to participate in a fun campaign called Make Something Amazing Tonight using Kraft Fresh Take. I received two recipe challenges to complete (plus keep an eye out for a $100 giveaway coming soon!). This week’s challenge is to make a meal that contains a protein, vegetable and carbohydrate. It must also double as a packable lunch for the next day and be something easy that you can make during the week.

Making a meal that features a protein, vegetable and carbohydrate is very easy for me. Every meal I make for dinner (with the exception of pasta) contains all three elements.

For this challenge I was going to make Meatloaf, instant mashed potatoes and steamed broccoli. Unfortunately I didn’t have any instant mashed potatoes so I had to use rice instead. Rice was not my first choice. Mashed potatoes go so much better with meatloaf.

Here is how I prepared my meatloaf.

Meatloaf

Meatloaf Ingredients

Ingredients:

  • 2 pounds of ground beef (the leaner the better) or you can substitute with ground turkey
  • 2 eggs
  • 1/3rd of a cup of ketchup
  • 1 cup of water
  • 1 box of Stove Top Stuffing (any flavor)
  • 1 package of Kraft Fresh Take Italian Parmesan
  • 1/2 a teaspoon of dried Basil
  • Chopped garlic (optional)
  • Pepper (optional)

Directions:

Pre-heat the oven to 400 degrees.

 Egg

In a large bowl crack open the eggs and whisk them until mixed.

 Ingredients

Add in the water and ketchup and Basil and mix again.

Next add in the Fresh Take and mix.

Stuffing

After the Fresh Take add in the stuffing.

Ground Beef

Add in the ground beef followed by the stuffing, Fresh Kraft Taste, garlic (optional) and pepper (optional).

Mix well. You can use a spoon but I do it the same way my  mom and mother in law mixed meatloaf – with my hands! Just make sure that they are clean and make sure to wash them off well afterwards too.

Once mixed place the meatloaf on a pan and shape it. I prefer to shape mine like an egg or oval shape.

Cook at for approximately an hour and a half. If you like it a bit more pink and juicy you can cook for less time. We happen to like ours fully cooked and a bit crispy on the outside.

Some people might not consider this an “easy weekday meal” because it takes over an hour to cook. However, I personally find this as a super easy weekday meal because it takes literally just a few minutes to prepare and while it’s cooking I can help my kids with their homework or do other things. I am not tied down to the kitchen. I literally just pop it in the oven and walk away until it’s done. So for me that makes it an easy weekday meal.

For a side dish I steamed some broccoli in the microwave (8 minutes) and whipped up some rice (approximately 8 minutes too).

As part of the challenge I also had to create something that could be used as a package lunch for the next day. Have you ever had a meatloaf sandwich? Yummy!!!!! I think my favorite part about meatloaf is not when it’s fresh from the over but rather cold, one soft bread, with a squirt of ketchup. Mmmm…!!!!! I could go for that right now!

Some people might wonder why I would use both stuffing and the Kraft Fresh Take. I like the Kraft Fresh Take because of the cheese and because I think it really helps to make the meatloaf more firm. There is nothing worse then a crumbly meatloaf. It makes is difficult to cut decent size slices as well as thin slices for sandwiches. So not only does the Kraft Fresh Take add more flavor, it also helps to consistency of the meatloaf.

    I have seen the Kraft Fresh Take in stores. For some like me this would be quite helpful. I don’t have many seasonings at home. I don’t buy breadcrumbs. So I like that I can make a small portion with this and not have a tub of breadcrumbs sitting for ever, this is similar to those great salad kits with just enough cranberries and croutons to,make guests think you have all the right fixings to create a yummy salad.

    Thanks for the recipe.I have made the chicken and burgers with the Kraft Fresh Take,but never tried meatloaf.I will try this in the near future.
