She Scribes Italian Wedding Soup

Over the past few weeks I have shared with my readers creative recipes that I have made using Kraft Fresh Take Italian Parmesan. So far I have created Italian Wedding Soup and my family’s favorite, Meatloaf. Both recipes were made using Kraft Fresh Take as part of a campaign I am working on where I am being compensated for my participation. For each challenge I was provided with a challenge card to complete. Initially I thought it might be hard to to but I actually found the challenges very easy to do, and the results were delicious.

Kraft Fresh Take comes with seasoned bread crumbs and seasoned cheese. It can be used to coat chicken, pork or fish or used in a variety of other recipes.

As you can see, Kraft Fresh Take is much more than a coating for your poultry, pork or fish.

The first recipe I created using Kraft Fresh Take was Italian Wedding Soup. My inspiration for the soup was my mother in law, who passed away several years ago. She was the quintessential Italian mother. Not only was she an amazing cook who make almost everything from scratch, but she also thrived on huge Italian meals with my husband’s siblings and their families. She had six children (my hubby is the youngest). All of them are married with children. When she cooked she cooked for an army. LOL! After everyone got married and moved out she still continued to cook for a huge family. My husband and I often benefited from that because we lived across the street from her (literally) and she would often call us and tell us to come over with all the left over dishes we had to take some of the food that she made. Needless to say we never complained about that. :-)

My mother in law used to make the most amazing Italian Wedding Soup. She used Escarole, which I never cooked with before. So I opted for Spinach. Since I didn’t have her recipe I had to create my own, however all along she was my inspiration.

My husband’s family (both his mother’s side of the family and father’s side of the family) all hail from Italy. Both sets of grandparents were from Napoli (Naples), Italy.

I have always wanted to visit Italy, ever since I was a little girl, especially Pompeii, Rome and Venice. Some day I hope to get there with my family and experience real, authentic Italian cooking again.
