It’s the summer time. It’s the best time of year to hang out with family and friends, whether it’s a backyard barbecue, picnic, pool party or even just hanging out watching a movie (or two).
When you get together with family and friends, especially if you are the host/hostess, it’s nice to have an ample supply of snacks, foods and beverages on hand to serve your guests. Even if you are simply hanging out, offering guests a tasty snack and ice cold beverage is a “must”.
I’ve been trying to plan a get together with a few friends. Sadly this time of year it’s hard to get everyone together because people have different vacation times or other plans. My plans for a big gathering didn’t pan out, but that is OK. We were still able to have ex-neighbors and current neighbors stop by just to hang out, chat and enjoy each other’s company.
Since this was an informal get together I figured some simple snacks would be sufficient, however I wanted to offer my guests something a little more than just the normal chips and dips they are accustomed to. I’ll admit that I don’t make dips from scratch. I usually buy pre-made ones. I assumed making a dip from scratch would be time consuming and cost more than a pre-made dip. I was very wrong about that. Dips are super easy to make. Most just need a few simple ingredients, many of which you might already have on hand.
The first thing I needed was to pick up some chips to share with my guests. Frito-Lay makes a lot of varieties that are favorites of ours, especially Doritos, TOSTITOS® SCOOPS!® Tortilla Chips and Lay’s® Classic potato chips. I picked up several bags so I could offer my guests a nice variety.
I even picked up some Pepsi. I had a few extra cans left over from Pepsi’s limited edition cans designed by HGTV’s Vern Yip. I shared them with my guests too. Even though I had plenty of other soda and cups, the cans are just too pretty to keep to ourselves.
Now that we had the chips we needed some great dips to go with them. One dip I made for my guests is Frito-Lay’s Black
Bean Corn Bites dip recipe. I’ve never had a dip like this before (made with beans and corn). I was excited to give it a try.
Here is the recipe from the Frito-Lay website.
- 2 cups frozen sweet corn, thawed
- 1/2 cup canned black beans, rinsed and drained
- 1 bunch green onions, chopped
- 1/2 avocado sliced
- Juice of half a lime
- 1/4 cup chopped cilantro
- 1 cup TOSTITOS® Restaurant Style Salsa
- 1 bag TOSTITOS® SCOOPS!® Tortilla Chips
- Combine all ingredients except for the chips and toss well in glass bowl.
- Let sit in the refrigerator for 30 minutes to 1 hour before spooning mixture into TOSTITOS® SCOOPS!® Tortilla Chips and place on serving dish and serve immediately.
I didn’t use avocado in the recipe when I prepared it. No one in my family really likes avocados and I asked my guests before hand and only one liked avocado. So that everyone could enjoy the recipe I omitted the avocado.
The recipe calls for you to fill the TOSTITOS® SCOOPS!® Tortilla Chips and serve them to guests that way. Before I had a chance to get a whole tray made up my guests were already using it as a regular dip and scooping the bean dip with the TOSTITOS® SCOOPS!® Tortilla Chips. So I put some aside in a bowl so that guests could scoop up as much as they wanted.
I love this dip! I wouldn’t really call it a dip, per say. It’s like “stuffing” for the TOSTITOS® SCOOPS!® Tortilla Chips. It’s really hearty and filling. It’s a great change of pace from regular dips. It’s like a meal!
My husband was a bit “iffy” about the black beans but once he tasted it he was hooked. Even our friends asked for the recipe. I told them they could find it on the Frito-Lay website. 🙂
I wanted to create another dip for my guests, something they would never expect. I opted to make a Tzatziki dip. It’s made with cucumbers and Greek yogurt.
- 2 cups plain Greek yogurt
- 1 large cucumber chopped up (approx. 1 cup)
- 1/2 tablespoon of chopped garlic
- 2 tablespoons of lemon juice
- 2 tablespoons of finely chopped Dill
- Black pepper (optional)
- Salt (optional)
- Combine all of the ingredients in a bowl and blend well. Add in salt and/or black pepper to taste.
- Chill before serving. Stir before serving to guests.
Yum! Yum! Yum!
This was so easy and oh-so-good. Plus my guests loved the break from the normal dips (canned/premade) that I usually serve.
This dip was perfect with Lay’s® Classic potato chips. We actually went through all the Lay’s® Classic potato chips and started to use some of the Sun Chips too.
We enjoyed each other’s company for the evening. The kids played and the men talked about the upcoming NFL pre-season. The ladies (myself included) chatted about things like what we had planned for the rest of the summer, what we’ve done so far and when we’re planning on going back to school shopping.
Who says you have to do something spectacular to have fun in the summer. Just hanging out with family and friends and enjoying each others company is just as fun.
