It’s officially the holiday season. In less than two weeks it’s THANKSGIVING! I can’t believe it. We’ve already started to stock up on goodies for “turkey day”.
I love this time of the year – not only because I love to decorate and it’s great to be with family and friends – but because I love the food. Food is a big part of the holiday season.
I’m a really good cook, but baking is not really my thing. I like to bake – I just tend to burn things.
A few years ago I made Peanut Butter Thumbprint Cookies that turned out really good. Since then I have made them many times during the holiday season.
Here is the recipe I use. It’s from the Hershey’s website (the photo is mine).
Ingredients
- 48 HERSHEY’S KISSES Brand Milk Chocolates
- 1/2 cup shortening
- 3/4 cup REESE’S Creamy Peanut Butter
- 1/3 cup granulated sugar
- 1/3 cup packed light brown sugar
- 1 egg
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1-1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Additional granulated sugar
Directions
Heat oven to 375°F. Remove wrappers from chocolates.
Beat shortening and peanut butter in large bowl until well blended. Add 1/3 cup granulated sugar and brown sugar; beat until fluffy. Add egg, milk and vanilla; beat well. Stir together flour, baking soda and salt; gradually beat into peanut butter mixture.
Shape dough into 1-inch balls. Roll in granulated sugar; place on ungreased cookie sheet.
Bake 8 to 10 minutes or until lightly browned. Immediately press a chocolate into center of each cookie; cookie will crack around edges. Remove from cookie sheet to wire rack. Cool completely.
Makes about 48 cookies.
If you want to make this a bit quicker simply use pre-made cookie mix (prepare according to directions) and push a chocolate “kiss” (or other chocolate) in the center. Try a chocolate cookie with a peppermint “kiss”. Mmmm!!!!
Another thing I love to make (it’s not necessarily cooking or baking – but it’s something family and friends love) is Fireside Coffee.
Fireside Coffee Mix
Ingredients:
- 2 cups of non-dairy powdered coffee creamer
- 1 and a 1/2 cups of hot cocoa mix (I used Swiss Miss Cocoa for this batch)
- 1 and a 1/2 cups of instant coffee (regular or decaf)
- 1 and a 1/2 cups of sugar
- 1 teaspoon of ground cinnamon (I used roasted Saigon cinnamon)
- 1/2 teaspoon of ground nutmeg
Directions:
Place all of the ingredients in a very large bowl and mix well. Or you can put smaller batches of the mix in a blender.
Store in an airtight container.
To use add two heaping spoonfuls to a mug and add in hot water, stir and enjoy. You can adjust the amounts based on your preferences.
For an extra special treat top with whipped topping and crushed candy canes.
I give this away as gifts too. I put it in decorative jars and add some ribbons and a note with the directions.
Lastly another thing I love to make during the holiday season is Muddy Buddies. They are ooey gooey and messy but taste so good!
