When you think of making memories, Hellmann’s mayonnaise is probably something that wouldn’t come to mind. For me and my family, it does.
A few weeks ago cousins of ours from the United Kingdom (Wales to be exact) came to visit. My immediate family and I were not able to go with them on a mini-family reunion in Pennsylvania, so my father arranged to have us come over the following weekend, along with my other cousin and her grandsons.
I wanted to make things easier on my step-mother. She has Parkinson’s Disease and I didn’t want her to have to worry about doing the cooking. We offered to bring and prepare most of the foods. On the menu – hamburgers & hot dogs for the kids, chicken for the adults, garden salad, macaroni salad, deviled eggs, chips, dips, cake and more.
My relatives are NOT keen on having their images shared on the Internet so I had to fuzz out their faces. My UK cousins really didn’t understand what I was talking about when I mentioned my blog so I fuzzed them out just to be on the safe side.

At the event Chef MarioBatali created these amazing hamburgers that I had the opportunity to sample at the event.
I decided to make them for my family (I also made some regular hamburgers for the little ones).
Here is the recipe.
Juicy Salsa Burgers
Ingredients
2 lbs. ground chuck (I used approx. 2 pounds of ground turkey)
1/2 onion, grated
3 Tbsp. Hellmann’s® or Best Foods® Real Mayonnaise
3 Tbsp. Worchestershire Sauce
1 Tbsp. chili powder (optional)
1/2 cup salsa
8 hamburger buns
Directions
Combine ground chuck, onion, Hellmann’s® or Best Foods® Real Mayonnaise, Worchestershire sauce and chili powder in medium bowl. Form into 8 patties. Season with salt and pepper to taste.
Grill patties to desired doneness. Top with salsa and serve on buns.
I used ground turkey instead of ground meat and I didn’t use the Worcestershire Sauce or Chili powder. I figured the kids wouldn’t like it (the adults would). I probably should have with the turkey meat. The Worcestershire Sauce would have given them a bit more flavor.
My cousin’s grandsons didn’t use the salsa on top, but my kids did.
My daughter didn’t use a bun. She didn’t like the bun with the salsa for some odd reason.
Of course what barbecue wouldn’t be complete with macaroni salad.
Of course I made it with Hellmann’s mayonnaise.
Normally I added chopped up hardboiled eggs to my macaroni salad, but since I also brought deviled eggs I didn’t want it to be “egg overload”.
The little black spots that you see are just spec of garlic pepper and black pepper.
Deviled Eggs are so yummy!
I sprinkled them with paprika and bacon bits.
I wanted to make something special for the grown ups. I decided to make Parmesan Crusted Chicken – but – I wanted to add a bit of a personal twist to it. I turned it into a Chicken Cordon Bleu – or at least I attempted to do that.
Here is the original recipe from Hellmann’s.
Parmesan Crusted Chicken
Ingredients
1/2 cup Hellmann’s® or Best Foods® Real Mayonnaise
1/4 cup grated Parmesan cheese
4 boneless, skinless chicken breast halves (about 1-1/4 lbs.)
4 tsp. Italian seasoned dry bread crumbs
Directions
Preheat oven to 425°.
Combine Hellmann’s® or Best Foods® Real Mayonnaise with cheese in medium bowl. Arrange chicken on baking sheet. Evenly top with Mayonnaise mixture, then sprinkle with bread crumbs.
Bake until chicken is thoroughly cooked, about 20 minutes.
Timesaving Tip: Try making this dish with thin-cut boneless skinless chicken breasts! Prepare as above, decreasing bake time to 10 minutes or until chicken is thoroughly cooked. TIP: Omit Parmesan cheese and have “Magically Moist Chicken” on the table in less than 30 minutes.
What I did was take the chicken breasts and smash them a bit with a mallet to flatten them out a bit more. Then I took a little bit of Swiss cheese and placed it on the chicken and some cut up ham (I used left over ham…shh… don’t tell anyone). Then I rolled it up. I topped each chicken breast “roll up” with Hellmann’s, bread crumbs and the Parmesan cheese.
They tasted MUCH BETTER than they looked. They looked good until they were cut open. Then everything sort of just oozed out.
I also made them ahead of time and put them in a pan to warm up at my father’s house. I don’t know if that had anything to do with them oozing out like they did (unless I used too much Swiss?). I would have made them at my father’s house but I thought by doing them head of time I would save time.
In addition we had chips, dip, fresh fruit salad, cheese, crackers, coffee, soda, tea and an assortment of cakes (slices). I was going to try and make the Hellmann’s Chocolate Cake, but I didn’t have time. So I grabbed some cake slices from the local warehouse grocer.
Here is the recipe I was going to make.
Super Moist Chocolate Mayo Cake
Ingredients
1 box (16.5 oz.) chocolate cake mix
1 cup Hellmann’s® or Best Foods® Real Mayonnaise
1 cup water
3 eggs
1 tsp. ground cinnamon (optional)
Directions
Preheat oven to 350°. Grease and lightly flour two 9-inch round cake pans*; set aside.
Beat cake mix, Hellmann’s® or Best Foods® Real Mayonnaise, water, eggs and cinnamon 30 seconds in large bowl with electric mixer on low speed. Beat on medium speed, scraping sides occasionally, 2 minutes. Pour batter into prepared pans.
Bake 30 minutes or until toothpick inserted in centers comes out clean. Cool on wire rack 10 minutes. Remove cakes from pans and cool completely. Sprinkle, if desired, with confectioners sugar or fill and frost.
You might be asking “How did Hellmann’s make this family gathering special?”. Hellmann’s didn’t, per say, but great food, lots of laughs and seeing relatives we haven’t seen in a long time made the day special. Two of my cousins were in from the United Kingdom (Wales to be exact). We have not seen them in YEARS. It was great visiting with them.
One of my other cousins (the blonde) showed up as a total surprise. She is one of my best friends. She is more of a sister to me then a cousin. We haven’t seen each other in two years (she lives in PA, we live in NY). She surprised me by being there when we arrived. My father and step mother kept it a secret from me. I actually bawled my eyes out when I saw her. I didn’t want to stop hugging her.
Serving my mock Chicken Cordon Bleu (made with the Hellmann’s Parmesan Crusted Chicken) is going to be a memory for everyone too. They all said it looked good but when everyone started to cut into them and everything came gushing out I know a few of them had surprised looks on their faces. Most of my family had cringes on their faces when they took their first bite (it didn’t look too appetizing) but once they tried it they enjoyed it. In fact I didn’t make enough. I wasn’t expecting one of my cousins and I didn’t know that my cousin’s grandsons would want some too. None the less there was ample food to go around.
My cousins from the UK are aware of Hellmann’s and they tell me that it’s available in the UK (I’m not sure about that – but that is what they told me). They have never used it before but since trying the dishes I made with Hellmann’s they are going to look into getting some where they live and trying the recipes. I also told them to check out the Hellmann’s website for ever more recipe ideas.

I wanted to use one of the newer flavors of Hellmann’s but I wasn’t sure if everyone would enjoy them. Hellmann’s Balsamic Mayonnaise and Olive Oil Mayonnaise are really good. I was a bit hesitant with the Balsamic at first because the color is different than the pure white regular Hellmann’s (it has a brownish tint). It takes great – especially on sandwiches and mixed with pasta.
It was fun entertaining my extended family. We all had a great visit too. If only we had more time together. 🙁

I would love to use Hellmann’s at our Christmas Eve dinner! I’d make Chicken Balboni: chicken baked in a mixture of Hellmann’s, sour cream & parmesan cheese…with thyme sprinkled on top! Rich & creamy & delicious!

I use it to make tuna patties, much like salmon patties but a lot cheaper. It makes them and salmon patties so moist and gives it a nice zing along with green peppers red onions grill seasoning and salt pepper and lemon juice bread crumbs and egg. It’s so good.
