One of my goals for 2014 is to make healthier food choices. I am guilty of reaching for freezer-to-microwave processed meals for lunch. I often don’t have the time to make healthier meals. It’s my health. I SHOULD make the time.
I used to love to eat fish all the time. Growing up we had fish at least 1-2 times per week. Since getting married and having kids I haven’t cooked fish like I know I should. My kids love fish. It’s my husband who can’t stand it. I don’t make fish because of him. This year I plan on making fish dinners for me and my kids and I’ll serve my hubby left overs or whatever he wants.
Gorton’s has plenty of quick and easy fish products that I can turn into a healthy and delicious meal in no time. In fact me and my daughter have been enjoying Gorton’s grilled fish filets for the past couple of weeks. They are so easy to make. You can cook them in the microwave in a matter of minutes.
Gorton’s sent me some free product coupons and branded goodies to try out their grilled fish fillets. I have tried them in the past and loved them.
I never thought to check out their website for recipes. Gorton’s also sent me a few recipe cards for inspiration. One that stood out to me was the Grilled Gloucester Roll Up. Not only was is super quick and easy to make, I also “cheated” and picked up pre-cut peppers and onions from the grocery store and used minute rice. I had a delicious lunch ready in less than 10 minutes.
I have to admit that I’m a dork. I took pictures of most of the ingredients. I forgot to take a picture of the finished product! I was so anxious to try it out that I didn’t stop and think that I need a photo too. Duh!
Here is the recipe that I used.
As I mentioned I picked up pre-cut peppers and onions which helped me to whip up this speedy meal. If I had to wash and cut up the vegetables it would have taken a wee bit longer. Buying the veggies pre-cut like this only cost me a couple of dollars. What I didn’t use I tossed into a side salad.
This recipe was so easy to make that even my daughter could make it.
The recipe called for Salmon but I really wanted to try lemon butter filets. Since the recipe called for lemon I thought it would be an ideal pairing.
I also added some black pepper. I love black pepper. I put it on a lot of things.
Now that I know how easy this was to make I plan on making it often. It’s a great lunch and it would be ideal for a dinner too. Now if only I could get my husband to try fish. I know he would love it.

So far I have tired Gorton’s Grilled Fish Filets in the following flavors – Lemon Butter, Garlic Butter and Italian Herb. Each box comes with two fish filets. So far my favorite is the Lemon Butter. I love lemon on fish. I always squeeze lemon juice on fish and other seafood.
