Do you ever have those days where you forgot to take out something for dinner? Or a day that you are too tired or busy to cook and you need something quick and easy? I’m sure we’ve all had those days from time to time.
I make it a point to always keep things on hand in my pantry or fridge that will allow me to whip up a quick meal for my family. For example, tonight we’re having lentils which is just two cans of lentil soup, pasta and a jar of spaghetti sauce mixed together. It might not sound like much but it’s tasty and filling and takes just a few minutes to make. Making the pasta takes the longest. The rest is just takes minutes.
Last week I whipped up peppers, onions and eggs. Basically it’s scrambled eggs with peppers and onions that we eat on hamburger rolls. Sometimes I pair it off with some baked French fries or potato tots. It’s essentially quick and easy, the only time consuming part is washing the peppers and cutting them up, as well as cutting up an onion. That is the only downside to other wise yummy meal.
Lately our local grocery store has not had an impressive product section. The peppers are either tiny or just don’t look good.
Thankfully Bird’s Eye Recipe Ready came to my rescue. I keep an assortment of Bird’s Eye Recipe Ready bags in my freezer. I happened to have a bag of tri-color peppers (green, red and yellow) and onions. All I needed to do was warm the vegetables up in a large frying pan. Once they were warmed up I poured in the eggs and within minutes I had scrambled eggs with peppers and onions ready to serve my family.

I love Birdseye Recipe – I have used it before to make a stir fry. Easy peasy and always waiting for me in the freezer.

A few of these would be helpful to keep in the freezer…my grocery’s produce section is very hit or miss, and this way I wouldn’t have to redo my menu or go elsewhere, just because the peppers were less than perky!

I’ve not noticed these before – I think my mind tunes out what I’m not precisely looking for – I’m obviously missing out! I want to try these- we’d have more veggies if it was convenient – and this makes it so easy! Nice combinations, too.
