Most of my regular readers are probably familiar with the Hellmann’s Chicken Challenge that I’ve blogged about in the past. I even attended a Chicken Challenge event in NYC over the summer where three chicken recipes were put to the test to see if they could defeat the reigning champion, Parmesan Crusted Chicken. The Parmesan Crusted Chicken recipe is still undefeated.
For the holidays Hellmann’s is putting a different spin on the Chicken Challenge. Yesterday they introduced Hellmann’s TURKEY Challenge.
The Turkey Challenge is similar to the Chicken Challenge. Each week Hellmann’s will post mouth watering Turkey recipes on their site, www.Hellmanns.com. While you are there you can cast your vote on which is your favorite recipe. Your vote automatically enters you into a weekly sweepstakes where you could win grocery gift cards.
This week (November 8, 2011 – November 14, 2011) Hellmann’s hero recipe, Turkey Casserole, will be up against a delicious Savory Turkey Loaf and one of Chef Bobby Flay’s recipes, “Stuffing” Crusted Turkey Cutlets.
Here are this week’s recipes for the Hellmann’s Turkey Challenge. I haven’t made them yet, but I am certainly planning on it. Chef Bobby Flay’s “Stuffing” Crusted Turkey Cutlets look SO GOOD!
”STUFFING” CRUSTED TURKEY CUTLETS
Servings: 4 Prep Time: 15 minutes Cook Time: 10 minutes
Ingredients:
2 cups panko or plain dried bread crumbs
3 Tbsp. finely chopped fresh flat-leaf parsley
Salt and freshly ground black pepper
1/4 cup Hellmann’s® or Best Foods® Real Mayonnaise
2 Tbsp. Dijon mustard
1 tsp. poultry seasoning
4 turkey cutlets (about 1/2 inch thick)
4 Tbsp. canola oil, divided
Directions:
Combine bread crumbs, parsley, salt and pepper in large shallow dish; set aside.
Combine Hellmann’s® or Best Foods® Real Mayonnaise, mustard and poultry seasoning with wire whisk in small bowl and season, if desired, with salt and pepper.
Season turkey, if desired, with salt and pepper. Brush 1 side of each turkey cutlet with mayonnaise mixture, then coat in bread crumbs.
Heat 2 tablespoons oil in 12-inch nonstick skillet over medium- high heat and cook 2 turkey cutlets, bread side down, 3 minutes or until golden brown and a crust has formed. Turn over and cook an additional 2 minutes or until turkey is thoroughly cooked. Repeat with remaining oil and turkey.
SAVORY TURKEY LOAF
Serves: 8 Prep Time: 10 minutes Cook Time: 1 hour 10 minutes
Ingredients:
2 lbs. ground turkey
3/4 cup Italian seasoned bread crumbs
1 envelope Knorr® French Onion recipe mix
2 eggs
1/4 cup water
1/3 cup Hellmann’s® or Best Foods® Real Mayonnaise
Directions:
Preheat oven to 350°. Line 13 x 9-inch baking pan with aluminum foil and spray with no-stick cooking spray; set aside.
Combine all ingredients in large bowl. Shape into loaf in prepared pan. Bake 1 hour 10 minutes or until done. Let stand 10 minutes before serving. Drizzle, if desired, with barbecue sauce.

Prep Time: 15 Minutes
Cook Time: 40 Minutes
Ingredients:
4 cups leftover prepared stuffing, divided
4 cups coarsely chopped leftover cooked turkey (about 1 lb.)
3/4 cup Hellmann’s® or Best Foods® Real Mayonnaise, divided
1/4 cup whole berry cranberry sauce
2 cups leftover mashed potatoes
1-1/2 cups shredded mozzarella cheese (about 6 oz.)
Directions:
Preheat oven to 375°. Spray 8-inch baking dish with no-stick cooking spray. Spoon in 2 cups stuffing, then top with turkey.
Combine 1/4 cup Hellmann’s® or Best Foods® Real Mayonnaise with cranberry sauce; evenly spread over turkey.
Combine remaining 1/2 cup Mayonnaise, potatoes and cheese in large bowl. Evenly spread on turkey, then top with remaining 2 cups stuffing.
Bake 40 minutes or until heated through. Let stand 10 minutes before serving. If desired, garnish with dried cranberries.
Also terrific with Hellmann’s Light Mayonnaise.

This sounds tasty. I only use ground turkey and always open to new ideas using this. Plus the gives you an option when using all that leftover turkey. Thanks for sharing!
