Kraft Fresh Take Make Something Amazing

We’re in a rut – a BIG TIME rut. I tend to make the same things over and over again for dinner. I don’t mean to. It just happens that way. I’m a busy mom and I don’t always have time to rifle through the pages of the dozens of cookbooks that I own to find something to make my family for dinner. I tend to make the same things over and over again. 🙁

Kraft must have known that I needed to mix things up a bit. They challenged me to make something amazing for dinner that my family would love. They understand that it can sometimes be difficult to create quick and delicious meals for our families.

Challenge accepted!

My specific challenge was to make something for my family that was not chicken (we tend to eat a lot of chicken). I also needed to incorporate my favorite fruit into the meal and create a delicious salad that can be prepared in ten minutes or less. I was also asked to use a specific flavor of Kraft Fresh Take – Italian Parmesan.

Have you tried Kraft Fresh Take yet? Kraft Fresh Take combines seasoned breadcrumbs with fresh natural cheeses. You can use it to dress up your favorite protein or enhance a side dish.

Kraft Fresh Take Varieties

Kraft Fresh Take is available in a variety of flavors;

  • Smokey Mesquite BBQ
  • Spicy Chipotle Cheddar
  • Classic Four Cheese
  • Italian Parmesan
  • Cheddar Jack and Bacon
  • Savory Four Cheese
  • Southwest Three Cheese
  • Rosemary and Roasted Garlic
  • Chili Lime and Panko

You can find Kraft Fresh take in the dairy aisle. I find mine next to the shredded cheeses.

Since my challenge involved using Kraft Fresh Take in Italian Parmesan flavor, I thought I would create an Italian inspired meal for my family. I wanted it to be something quick and easy and something they would enjoy. I decided to make Italian Wedding Soup. My mother in law used to make the most delicious Italian Wedding Soup. She passed away before she could teach me her recipe. So I have had to try and create my own version based on what I remember her using.

Italian Wedding Soup Ingredients


1 package of Kraft Fresh Take Italian Parmesan

1 pound of lean ground beef or ground turkey

2 eggs beaten

1 teaspoon of dried Basil

2 cups of fresh spinach, washed and chopped

1 cup of chopped carrots

1 cup of Orzo or Ditalini Pasta

1/4 cup of minced onions

12 cups of low sodium chicken broth (or two 3 pound cans)

1 cup of water

1 teaspoon of chopped garlic (optional)

black pepper to taste (optional)

shredded Parmesan (optional)

1. In a large bowl combine the meat, beaten eggs, basil, onion and both packets of the Kraft Fresh Take (both the cheese and bread crumb packets).

2. Mix all the ingredients thoroughly with a large spoon or your hands (my mom always mixed meatballs with her hands).

3. Once thoroughly mixed break off small pieces and roll into small balls, approximately 3/4″ – 1″ in size. Set aside when done.

4. In a large pot combine the chicken broth, water, spinach, carrots and pasta. CAREFULLY drop in the meatballs. If you find that you have extra meatball set them aside.

5. Bring to a boil then reduce heat and let it simmer for 10-15 minutes until the meatballs are cooked. I recommend taking one or two out and cutting them open just to make sure. The meatballs should start to float when they are done. The pasta should also be al dente or fully cooked (your choice).

6. At this point you can add the minced garlic (optional)

Italian Wedding Soup No Cheese

To serve spoon into bowls and enjoy! You can also top it with a little black pepper and/or shredded Parmesan cheese (optional – I love black pepper and the extra cheesy goodness).

Extra Meatballs

If you have extra meatballs you can cook them in another pan and use them for lunch the next day. They are great meatballs for a meatball sandwich. You can even serve them to your children with a little ketchup or sauce to dip them in.

The Kraft Fresh Take Italian Parmesan gave the meatballs a nice blend of seasoning as well as an unexpected cheesiness, which is not something you normally find in Italian Wedding Soup meatballs.

Another part of my challenge was to incorporate my favorite fruit into the meal as well as create a salad that could be made in under 10 minutes. I had the perfect salad.

1 package of spinach, washed with excess water blotted off

1 pint of fresh strawberries

Feta cheese

Balsamic Vinaigrette dressing


1. Wash and cut up the strawberries into small, bite size pieces.

2. Put the spinach in a large bowl. Add in the strawberries and toss.

3. Serve on individual plates. Sprinkle with Feta cheese and drizzle on Balsamic Vinaigrette

The salad takes maybe 5 minutes. The only thing that really takes time is washing and cutting up the strawberries.

Italian Wedding Soup

From start to finish dinner took about an hour to make. I could have done it in about a 1/2 hour if it wasn’t for rolling the little meatballs. That was the only time consuming thing. This would be the perfect time to have your children help. While you are taking care of the rest of the recipe you could have your children roll the little meatballs. 🙂 Then you can have dinner and a salad on the table in about a 1/2 hour.

I’m glad I except the Kraft Fresh Take Challenge. I’ve created a new way to make meatballs, and my family was crazy about the soup and salad. In fact I have none left! They ate it all up. There is nothing that makes a mom more happy then knowing her family loved a meal so much that they make sure there wasn’t any left overs.
