My meal inspiration – What inspires you? ($100 gift card giveaway ends 4/9/13) #KRAFTFreshTake

She Scribes Italian Wedding Soup

Over the past few weeks I have shared with my readers creative recipes that I have made using Kraft Fresh Take Italian Parmesan. So far I have created Italian Wedding Soup and my family’s favorite, Meatloaf. Both recipes were made using Kraft Fresh Take as part of a campaign I am working on where I am being compensated for my participation. For each challenge I was provided with a challenge card to complete. Initially I thought it might be hard to to but I actually found the challenges very easy to do, and the results were delicious.

The flavor of Kraft Fresh Take that I used for both my recipe challenges was their Italian Parmesan flavor. Kraft Fresh Take is also available in…

  • Classic Four Cheese
  • Spicy Chipotle Cheddar
  • Smokey Mesquite BBQ
  • Southwest Three Cheese
  • Rosemary Roasted Garlic
  • Cheddar Jack & Bacon
  • Chili Lime & Panko
  • Savory Four Cheese
  • Italian Parmesan

Kraft Fresh Take comes with seasoned bread crumbs and seasoned cheese. It can be used to coat chicken, pork or fish or used in a variety of other recipes.

If you Google Kraft Fresh Take, or search the hashtag #KRAFTFreshTake on Twitter, you can find other recipes the incorporate Kraft Fresh Take. Some examples are Mac and Cheese Southwest Style by Alison at BeingAlison.com and Colleen’s Italian Cube Steak Sandwich, over at ShibleySmiles.com. As you can see, Kraft Fresh Take is much more than a coating for your poultry, pork or fish.

The first recipe I created using Kraft Fresh Take was Italian Wedding Soup. My inspiration for the soup was my mother in law, who passed away several years ago. She was the quintessential Italian mother. Not only was she an amazing cook who make almost everything from scratch, but she also thrived on huge Italian meals with my husband’s siblings and their families. She had six children (my hubby is the youngest). All of them are married with children. When she cooked she cooked for an army. LOL! After everyone got married and moved out she still continued to cook for a huge family. My husband and I often benefited from that because we lived across the street from her (literally) and she would often call us and tell us to come over with all the left over dishes we had to take some of the food that she made. Needless to say we never complained about that. 🙂

My mother in law used to make the most amazing Italian Wedding Soup. She used Escarole, which I never cooked with before. So I opted for Spinach. Since I didn’t have her recipe I had to create my own, however all along she was my inspiration.

My husband’s family (both his mother’s side of the family and father’s side of the family) all hail from Italy. Both sets of grandparents were from Napoli (Naples), Italy.

I have always wanted to visit Italy, ever since I was a little girl, especially Pompeii, Rome and Venice. Some day I hope to get there with my family and experience real, authentic Italian cooking again.

Kraft asked me to create a board on Pinterest that showcased my inspiration for the recipes I created with my Italian Parmesan variety of Kraft Fresh Take. If you would like to check out my Pinterest board you can see it here – #KRAFTFreshTake Italian Parmesan Inspiration.

Here is my pin: http://pinterest.com/pin/72550243969546569/ / I selected and repinned one of the Kraft Fresh Taste recipes. Here is what I said in the pin regarding the crumbs & meal: I would select the Classic Four Cheese Fresh Take for this recipe and maybe add some slice chicken breast in the middle of the shells for Crispy Topped Stuffed Shells with Cheesy Chicken #KRAFTFreshTake.

I love Chicken Parmesan and I love stuffed shells so I think the combination of the two would be delicious!!

My favorite would be Cheddar Jack & Bacon & I’d create some kind of baked chicken dish with it.

  235. Savory Four Cheese sounds delish–I’d love to try it on pasta!
