Recipes for an entire meal (including appetizer & dessert!) from Seven Bites – DELISH!!!

 

 Seven Bites Inside Out Chocolate Covered Strawberries

I know many of my readers appreciate and enjoy recipes. I enjoy sharing them with you! I also love to have new recipes to add to my recipe collection that I an refer to when creating appetizers, side dishes, main meals and/or dessert for my family and friends.

Now that we will FINALLY have a house with plenty of room I fully intend on taking advantage of it and hosting as many parties as possible. Watch out Martha Stewart – here I come! :-)!!!

Appetizer:

“Stuffed Tomato Mozzarella”

Serving: 8

A fresh and healthy appetizer is the perfect way to start out a meal.  No one likes to fill up on an appetizer; a light “hors d’ oeuvre” allows your guests to feel satisfied before the meal, yet ready for the main course.  Trader Joes carries an amazing, flavorful spread that I suggest everyone should try.  I decided to use the bell pepper spread and add it to a classic mozzarella tomato appetizer that continuously pops up on my Pinterest! While I love adding different spices and dips to my dishes, I hate spice additions that will take away from the natural flavors of my dish.  Thankfully, the bell pepper spread has a thick texture, yet blends well with the mozzarella cheese.  This dip will enhance your appetizer, while remaining light.

Ingredients: 

  • 8 “High Lycopene” Tomatoes (roughly twice the size of 2 cherry tomatoes).  If you can’t find these tomatoes, any miniature tomatoes will be fine.
  • 1 tablespoon of Trader Joes Bell Pepper Spread
  • 4 oz of mozzarella cheese
  • 1 Persian cucumber

Directions:

  1. Cut the top of the tomato.  Remove juice from tomato.
  2. Spread bell pepper mix inside the tomato.
  3. Using a melon baller, scoop mozzarella cheese and place it into the tomato.
  4. Slice cucumber into 1/3rd inch pieces, and with a toothpick, place on top.

Side Dish:  

“Baked Potato Pizza”

Serving: 8

Going back to childhood, a baked potato was always the easiest side dish for my family to make.  It takes minimal work, and is very filling.  I decided to take 2 of my childhood favorites, pizza and a baked potato, and combine them into one awesome side dish.  I used “Paesana’s Garden Vegetable” sauce.  The flavors are so rich, and this is much easier to use then spending extra time making it from scratch.  Adding Paesana to the baked potato for your pizza sauce base gives you those extra vegetables that you would expect on a slice of veggie pizza.

Ingredients:

  • ½ a cup of Garden Vegetable marinara sauce
  • 8 mini brown potatoes
  • ½ cup of grated pizza cheese (Any supermarket will carry a blend of grated cheeses that will be made for pizza).
  • 1 cup of broccoli florets
  • 1 teaspoon of onion powder

Directions: 

  1. Pre heat oven to 350 degrees
  2. On a baking tray, spray the bottom with cooking oil.
  3. Place potatoes on baking tray and place in the oven for 40-45 minutes (or until potatoes can be easily cut into).
  4. Cut into the potato, making sure you have enough room to fill with your vegetable ingredients.  You may need to scoop out a little bit of the potato.
  5. Add about 1-2 teaspoons of vegetable sauce, a few broccoli florets; sprinkle some onion powder to taste.
  6. Bake in the oven for an additional 10-12 minutes.
  7. Remove potatoes from oven and sprinkle some cheese, making sure the top of the potato is fully covered.
  8. Place in the oven for 2-3 minute or until cheese has melted.

Main Dish:

“Asian Tilapia Fillet”

Serving: 6

While dressings generally do not have a thick texture for marinating purposes, I love using Walden Farms Asian Dressing, as it serves as a marinade and dressing, giving your food a light texture for flavoring.  The great thing about fish is that it’s fresh and healthy.  Many people drench their fish in a thick dressing thinking that it will brings extra flavoring, but the Asian dressing complements the tilapia as it brings a sweetness to the dish.

Ingredients:

  • ½ cup of Walden Farms Asian Dressing
  • 1 lb of tilapia fillet
  • 2 tablespoons of lemon juice

Directions:

  1. Pre heat oven to 350 degrees.
  2. In a baking dish, lay out the tilapia, making sure it’s spread out flat.
  3. Pour Asian dressing on tilapia, and flip over in order the dressing thoroughly coats the fish.
  4. Allow fish to marinate until over is at 350 degrees.
  5. Place in oven for 30-35 minutes.
  6. Remove fish from oven, and let cool for 5 minutes.
  7. Pour lemon juice over fish, making sure it is evenly spread.

Dessert:

“Yogurt Parfait for Two”

Serving: 2

Breakfast and Dessert I treat as the same meal.  I want to eat something sweet, yet not too filling.  A yogurt parfait allows you to indulge in that sugary craving, while still being healthy!  Some may say that pudding is the best to eat for dessert, but I’d like to think that something fresh and lighter like a yogurt is the way to go.  Chobani has become the “It” yogurt, and I wanted to take this talked about product and add something extra for a fun dessert.

Ingredients:

  • 2 Mini-Coupe dessert cups
  • 2 strawberries cut into small cubes
  • 1 6 oz. package of Chobani, Passion Fruit Low-Fat Yogurt
  • 2 tablespoons of honey
  • 3 tablespoons of granola

Directions:

1. Divide the strawberries evenly into two cups.  Set aside a teaspoon of the strawberries for the top

2. Place 2 tablespoons of yogurt on top of the strawberries

3. Add a tablespoon of honey around the side and center of the parfait

4. Scatter the granola, and place a few strawberries on top.

Oh my goodness! These sound (and look) SO GOOD!

I’m not a fan of tomatoes, but I would love to make the Stuffed Tomato Mozzarella. They look adorable! They would be fun to serve to guests at dinner party (formal or informal).

The Baked Potato Pizza looks yummy too. That is something I would love to serve to my family – maybe even tonight (I have to check to see if I have all the ingredients).
