There is a quick and easy way to spice up your meals. I can sum it up in one word – Marinade! Simply by marinading your chicken, beef or other meats you can transform your meals in just a few easy steps.
Marinading is a really simple thing you can do to your meats that will add a burst of flavor and all you need to do is soak the meat in a marinade for a few hours.
According to Lawry’s, if you want to put a fresh spin on your go-to grilling menu, check out these new pairings from the recently released McCormick® Flavor ForecastTM 2010: Grilling Edition:
Applewood & Plum – Juicy plums accent smoky applewood and add flair to all-American barbecue.
Cilantro & Lime – Cutting across the diverse cuisines, this bright and zingy pair is a refreshing taste of summertime.Rosemary & Fig – Figs are an unexpected and regionally inspired match for aromatic rosemary.
Cinnamon & Coffee – Bold and confident – with just the right edge of bitterness.
Red Chili Sauce & Mango – The flavor of mango takes hot or sweet red chili sauce far beyond mere “condiment status.”
Cinnamon & Coffee? Applewood & Plum? Brown Sugar & Bourbon? Oh my! My mouth is watering just thinking about how tasty these flavors would be paired up.
Lawry’s newest marinades allow you to infuse your meals with exotic flavors without ever leaving your home. Inspired by the sun-drenched villages of Italy, the Tuscan Sun-Dried Tomato Marinade features extra virgin olive oil, sun-dried tomatoes, sweet red bell peppers and the perfect blend of herbs. The Szechuan Sweet & Sour BBQ Marinade gives meat a delicious sweet and sour flavor with a touch of Szechuan heat.
My family LOVED the Tuscan Sun-Dried Tomato Marinade. I made it with some chicken and paired it with brown rice and corn on the cob. My kids, especially my overly picky daughter, couldn’t get enough of it. I’m not usually too keen on sun drive tomatoes but I really liked this marinade. It added a burst of flavor to otherwise boring chicken.
I was concerned about the Szechuan Sweet & Sour BBQ Marinade at first. I thought it might be too hot and spicy for the kids but they actually liked it. It does have a “kick” to it, that is for sure. But it’s not overly spicy.
I used the Szechuan Sweet & Sour BBQ Marinade with some steak meat. I paired it with roasted potatoes and french cut string beans. MMMM! It was so good. The left over steak also made a great sandwich.
You should check out the Lawry’s Grilling Flavor ForecastTM website at http://www.mccormick.com/FlavorForecast/2010FlavorForecastGrilling.aspx.

Well, to be honest my husband is really the griller in our family, but I think I have picked up his tips along the way. For ribs, he cooks them very low and slow (about 200 degree for a few hours) in our oven, wrapped in foil, and then takes them out to the grill. When they are cooking in the oven they have a dry rub on them, and when he puts them on the grill he slathers them with his homemade barbecue sauce the the last few minutes. To die for!
Thanks,

I shop once a month and try to prepare as far ahead as I can, and one thing that has been wildly successful for me is to mix meat in marinade and then freeze it until it's needed. The extra time, even in the freezer, makes the meat extra tender and tasty. asthenight at gmail dot com

Who woulda thought that soaking the meats in PICKLE JUICE before marinating or grilling somehow makes them more tender. Something about the brine acid breaking down the meat and it grills SO tender inside. My son does this with a crock pot recipe too and says you will NEVER cook any other way. Putting on the grill after a crock pot would give it that bbq taste after cooking all day to tenderize. MMMmmmmm…!
