Campbell’s AdDress Your Heart Recipe Challenge (Giveaway – ends 3/6/12)

Earlier this morning I was watching the news. There was a segment on “silent heart attacks”. Mostly women experience the silent heart attacks. Many of them don’t know they are even having a heart attack. The news said 19% of women have these kinds of heart attacks and of those 19%, 15% will die by the time they get to the hospital because it would be too late.

NOT the way I wanted to start the morning. 🙁

I worry about my heart all the time. I admit that I should be doing A LOT more to take care of myself and my health. My husband does. I should be more like him. Heart disease runs in the family. His father died when he was 42 years old (my son was 11 at the time) of a massive heart attack. My mother in law had heart problems too, including bypass surgery. Because of that I have encouraged my husband to visit a cardiologist regularly. So far, so good. The doctor says he’s “ticker” is in great shape. Now I have to jump on the “heart healthy bandwagon”, so to speak.

There are more than 42 MILLION American women who suffer from some form of heart disease. Risk factors are on the rise too! Now more than ever a heart healthy diet is VERY important.

Campbell’s is taking the initiative to show people that heart healthy cooking doesn’t have to be bland or difficult to prepare. Now it’s sixth year, the Campbell’s AdDress Your Heart campaign has pledged to contribute more than $3.6 million to the American Heart Association through 2012. I think that is awesome!

At Campbell, we have a tradition of culinary excellence, and this year’s campaign builds on that legacy to support our commitment to heart health,” said Eric Christianson, Vice President, Campbell Soup Company. “We hope these delicious and easy recipes will inspire people to feel like a top chef in their own kitchen.”

For this year’s campaign AdDress Your Heart has a Cooking Challenge with put celebrity Chef Richard Blais up against Campbell’s Master Chef Thomas Griffiths. Each was asked to create a mouthwatering dish that incorporate two of Campbell’s nearly 100 heart-healthy products, all in support of the American Heart Association’s Go Red For Women movement. 

Chef Blais created Spicy BouilliaBlais and Chef Griffths created the Spiced Chicken and Green Bean Salad recipe. It’s made with Campbell’s Select Harvest Healthy Request Tomato and Basil Soup (which I love on it’s own too or with rice), Pepperidge Farms Farmhouse Whole Grain White Bread (I had to substitute this because I couldn’t find it at my local grocery store), and a very delicious V8 V-Fusion Pomegranate Blueberry juice.

I had to substitute a few things because either my local grocery store didn’t carry it or I knew my family wouldn’t eat it (this recipe called for mushrooms and I’m the only one who likes mushrooms).

The recipe was more involved then the kids I’m used to making but it turned out really good as far as the taste. My presentation left a lot to be desired (thus the reason I don’t have a photo). I over cooked the green beans and they looked sort of funky. They tasted fine, they just didn’t look too appetizing. 🙂

It turned out really good and I have a hard time believing that it was a “heart healthy” meal. I actually was very gourmet, so so than I am used to making at home. It’s something that I will make again.

I haven’t tried the Spicy BouilliaBlais yet because it is made with Scallops and Shrimp and no one in my family will eat them except me (I love seafood). I didn’t want to make the whole thing for myself (freeze for future meals) because I’m not sure how long seafood will last in the freezer. I will have to wait to make this for when I have company.

Yoplait Lactose Free Yogurt (Giveaway – ends 3/4/12)

Lactose Intolerant people rejoice – there is now a Lactose Free yogurt on the market!

Introducing Yoplait Lactose Free yogurt. It is inspired by the Yoplait yogurt that everyone loves and enjoys.

Currently there are only four delicious flavors (I hope they come out with more soon) – French Vanilla, Peach, Strawberry and Cherry.

Each yogurt contains 50% of the recommended Daily Value of Calcium, including Vitamins A and D in every cup. The new Lactose Free yogurt does not contain artificial sweeteners. You can even use it in your favorite recipes, for example, Strawberry Cheesecake or Chocolate Crème Brulee.

I am somewhat Lactose Intolerant. I can tolerate cheese, some yogurts and ice cream in very small quantities (hard ice cream, not soft for some odd reason). I cannot drink a glass of milk or eat ice cream that has melted or it will seriously upset my stomach.

I was excited when I heard about the new Yoplait Lactose Free and I couldn’t wait to try it out. It took a bit before I saw it at my local grocery store. They didn’t have all the flavors yet, only Strawberry and Cherry. I picked up both of them. I’m not keen on plain yogurts (like French Vanilla) but I am looking forward to trying the Peach.

I really liked both of the yogurts that I tried. I normally prefer Strawberry but I actually liked the Yoplait Lactose Free Cherry better. Don’t get me wrong, the Strawberry was great too, I just liked the overall taste of the Cherry more.

Even though it doesn’t contain dairy the new Yoplait Lactose Free tastes very similar to regular Yoplait (I can tolerate most regular Yoplait flavors, meaning most of them do not upset my tummy). To be honest if you were to serve me a regular Yoplait and an Lactose Free Yoplait (taste test) I probably couldn’t tell the difference. That is how similar they are as far as taste and consistency.

It’s great that Yoplait released these new yogurts now. February is actually Nataion Lactose Intolerance Awareness Month.

Create great snacks and meals with WASA Crispbreads (Giveaway – ends 3/3/2012)

I am always on the look out for healthier snack and food options for my family. I take pride in the fact that my kids don’t inhale a bag of chips the moment they get home from school. Instead they usually grab better-for-you snack options like unsalted pretzels, raw baby carrots or an orange. I’m not saying that my kids are not allowed to have chips. They are. They just know that they have to keep it to a minimum.

My kids like to eat crackers. Sometimes they spread them with peanut butter and other times with cream cheese. While crackers are yummy I don’t necessarily consider them filling. You could easily down a half a package of crackers if you are not watching what you are eating.

Have you ever tried WASA Crispbreads before? They are like flatbreads. I’m sure you have seen them on the store shelves. Wasa is the world’s largest producer of flatbreads.

Did you know that Swedes eat more flatbread than any other people in the world? They eat almost 4 kilograms per capita. Wow! Flatbreads are actually available in most countries especially in other Scandinavian countries and Germany.

WASA Crispbreads are a yummy and wholesome alternative to crackers, or even bread. They are packed with whole grains. They are a healthier alternative but they don’t taste like “health food”. 

WASA Crispbreads are available in a variety of flavors and can be enjoyed morning, noon and night. You can can use them as a snack, a meal or they can accompany a meal. They are very versatile.

I find WASA Crispbreads to be very filling and satisfying. Where as I could easily down a half a package of saltines or other crackers, with the WASA I can have 1-2 crispbreads and feel full and satisfied.

Each WASA Crispbread has only 35-60 calories per slice. They are also all natural and fat free, except for two of the flavors (one has .05 grams of fat, the other 1.5 grams per serving). They are made with natural ingredients such as whole grain wheat, yellow corn, whole grain barley and whole grain quinoa.

You can top WASA Crispbreads with just about anything. Personally I like them with the low calori Laugh Cow Cheese (those small triangle shaped spreads). One triangle of cheese is enough to cover 2 slices of WASA.

My kids like WASA with Nutella. They like everything with Nutella. 🙂

WASA goes great with tuna fish. Use the WASA Crispbreads in place of regular bread for your sandwich. I’m just as filling as bread.

You can top WASA Crispbreads with cream cheese and fresh fruit or jam. You can also top them with hummus, refried beans, butter, peanut butter, banana, avocado or guacamole. The possibilities are endless!

 

WASA Crispbreads are great to dunk into soup too and go great as a side dish for stews and chili.

If you visit the WASA website you’ll find some recipes for WASA Crispbreads that I would never think to try and they sound SO GOOD too.  They have recipes for Feta and Tomato Bruschetta on WASAWASA Garlic (I’m going to try this recipe!), Ham and Swiss Muffuletta on Wasa and Wasa with Scrambled Eggs, Tricolor Peppers and Leeks. There are dozens of recipes found on the WASA website.

Happy Birthday Oreos!

Here is an interesting fact. This coming March 6th (2012) the iconic cookie, Oreos, will celebrate it’s 100th birthday. WOW! Who knew it’s been around that long? I would never have guessed it. Oreos certainly don’t look their age. Ha Ha.

In honor of this momentous occasion Oreo is releasing a limit edition Oreo cookie called Birthday Cake Oreo.

I love Oreos. Sadly they don’t always agree with my tummy so I can only eat 2-3 at a time. That is not really such a bad thing because it prevents me from each a half a dozen or more in one shot. I LOVE Oreos! With our without milk.

I’m one of those people who take apart the cookies, eat the cream and then enjoy the cookies. Do YOU eat your Oreos that way too?

I was excited when I heard about the Birthday Cake Oreos and I couldn’t wait to try one.

Birthday Cake Oreos look like regular Oreos except there are colorful confetti colors mixed in with the white cream. I really like the colorful new look. Oreos are already a fun cookie to eat. I think the colorful confetti cream makes them even MORE fun to eat and enjoy.

Another thing I noticed about the Birthday Cake Oreo was that print on the cookie it’s self. The cookie reads “Oreo 100” and features a birthday candle on top. They really thought of everything when designing these cookies.

The #1 thing I noticed about these delicious limited edition cookies is how they smell and taste. They smell EXACTLY like a slice of birthday cake and they taste like one too! I’m not exaggerating either. When you eat one of the Birthday Cake Oreos you would swear you just had a slice of birthday cake. It’s amazing how much the cookie tastes like a birthday cake.

They remind me of a vanilla birthday cake, even though the cookie is chocolate. I’m guessing they added more vanilla than they normally do in the cookie. I’m sure there is something else added to them to make them taste so out of this world wonderful!

These are going to be a limited edition. I truly hope that Oreo will reconsider that and make these available all the time. These are too good not to have around all the time.

The cookies shouldn’t be available on store shelves yet (not until the beginning of March) but my local grocery store already has them available for purchase. I have a feeling they might have “jumped the gun” a bit and put them out for customers a wee bit early.

If you love Oreos and you love birthday cake then you must check out these new cookies. Keep an eye out for them because they should be appearing on a store shelf near you any day now.

Two thumbs up, 5 stars and a 10+++ for the new Birthday Cake Oreo cookies. They are SO GOOD!

Wolfgang Puck Gourmet Pasta Sauces & Delicious Recipes

My family has some kind of a pasta dish at least 1-2 times per week. Pasta tends to be a budget friendly meal and it’s a personal favorite of every family member, including myself.

I try and mix things up a bit from time to time so my family doesn’t get bored with having pasta so often. Sometimes I use a different flavored sauce, other times I add different things to the pasta like meatballs or fresh peppers. We even have Spaghetti Tacos from time to time (yes, we eat spaghetti in a taco shell compliments of iCarly :-)).

My mother in law used to make your sauce from scratch. Well, I call is sauce, her and my husband called it gravy. For my post I’ll go with sauce (just to drive my husband nuts since chances are he’ll read this post).

We used to invite my mother in law up for dinner from time to time when she was still alive. I would always use sauce from a jar. She used to cringe whenever she found out I was making something with jarred sauce. She couldn’t understand why I didn’t make it from scratch. I used to use the excuse that I had an infant and a toddler (at that time) so I wasn’t physically able to. Mean while my mother in law had six children and she still had time to make the sauce. The reality is that it was just easier to open a jar.

I recently had the opportunity to try out two sauces from famed celebrity chef Wolfgang Puck. Chef Puck has teamed up with the Campbell’s Soup Company to create four delicious varieties of restaurant inspired sauces including…

–   Four Cheese

–   Arrabbiata

–   Tomato Basil

–   Creamy Vodka

All of the sauces are 100% natural too. They are ideal for any pasta dish you make as well as for using on homemade pizzas (I’m getting hungry just thinking about it!).

My family had the opportunity to try both the Arrabbiata and the Four Cheese.

I used the Arrabbiata on regular penne pasta. It was a big change compared to what we’re used to. The Arrabbiata has a “kick” to it. It’s made with red peppers and spices. Normally I just use a regular marinara sauce or a meat sauce. The penne tasted a lot different with a spicy sauce. It wasn’t too spicy but it did add a zest of flavor to the meal.

It was nice to change up a simple meal by just swapping out the plain marinara we usually use with something with a bit more pizzazz to it.

I used the Four Cheese sauce with stuffed shells. Stuffed Shells really don’t need too much added to them (they are yummy enough “as is”). I thought the Four Cheese would add just enough of a different taste to them without being too overpowering. I was right. The Four Cheese made the stuffed shells have more of a “gourmet” quality to them. Even my daughter commented on how it tasted like stuff shells from a restaurant. But they weren’t. They were pre-made frozen stuff shells topped with Wolfgang Puck’s Four Cheese sauce.

My daughter was correct. Wolfgang Pucks sauces does turn a plain meal into a gourmet, restaurant quality meal, with just the simple addition of one of his sauces.

Here are two yummy recipes you can try out yourself at home that utilize one of Wolfgang Pucks amazing sauces.

CHICKEN BREAST WITH HAM, PROVOLONE, ROSEMARY AND WOLFGANG PUCK’S CREAMY VODKA SAUCE

Yield:  Serves 8

Ingredients: 

4 chicken breast halves, skinless, boneless, about 8 ounces each

4 slices prosciutto or any thinly-sliced ham

4 slices provolone cheese

3 tablespoons extra virgin olive oil

Pinch of chile flakes

1 tablespoon fresh rosemary, chopped

2 tablespoons white wine

Kosher salt, freshly ground black pepper, to taste

12 ounces Wolfgang Puck’s Creamy Vodka Sauce

4 tablespoons buttered bread crumbs

Basil oil, for garnish

Fried basil leaves, for garnish

Directions:  

Pound chicken breasts with mallet until 1/4 inch thick, then season each piece with salt and freshly ground black pepper.

Place 1 slice of ham and cheese on each.  Tuck in sides and roll up as for jelly roll.  Skewer with bamboo skewer or tie.  In medium size bowl add olive oil, pinch of chile flakes, rosemary, white wine, salt and pepper, and Wolfgang Puck’s Creamy Vodka Sauce.  Whisk ingredients together and pour in to a baking dish.  Place rolled chicken breast on top of sauce.

Sprinkle top of chicken with buttered bread crumbs, cover with parchment paper and aluminum foil, and place in pre-heated 400 degrees oven for 20 minutes.  Remove foil and continue to cook chicken breasts until bread crumbs turn golden brown, about 5 minutes.

Remove from oven let stand for 5 minutes before serving.  Garnish with a little basil oil and fried basil leaves.  Serve with Parmesan Tomato Risotto.

SPINACH LASAGNA WITH WOLFGANG PUCK’S FOUR CHEESE SAUCE

Yield:  Serves 4

Ingredients:

3/4 pound lasagna pasta

1 pound spinach leaves, washed, stemmed, but not dried

2 tablespoons extra virgin olive oil

1 garlic clove, peeled and minced

Kosher salt and freshly ground pepper to taste

1-1/2 pounds ricotta cheese

3 cage-free eggs

5 cups Wolfgang Puck Four Cheese Sauce

1/4 Parmesan cheese, grated

3 cups shredded mozzarella

Directions:

Bring to a boil a large pot of water.  Lightly salt the water, and cook the pasta until al dente.  Remove with a slotted spoon, rinse under cold water, and set on a clean, dry towel until ready to assemble the lasagna.

Make the filling:  Cook spinach with the water that clings to the leaves after washing, just until wilted.  Drain thoroughly, and chop coarsely.  In a small skillet, heat the 2 tablespoons of olive oil.  Add the garlic and chile flakes as desired, and sauté briefly.  Add the spinach and sauté just until the spinach is coated with the oil mixture.  Season lightly with salt, chop and set aside.

In a small bowl, combine the ricotta, spinach, eggs, 5 tablespoons of Wolfgang Puck’s Four Cheese Sauce and 1 tablespoon of the grated parmesan cheese.  Season generously with black pepper and salt to taste.

Preheat oven to 400 degrees F.  Oil a baking tray and the inside of six 4-inch tart rings.  Arrange pasta in a baking dish.

To assemble each lasagna, layer lasagna pasta.  Spread some of the spinach mixture over the pasta.  Repeat process two more times.  Place final pasta on top, sprinkle with mozzarella and a little more Parmesan cheese.  Repeat with the remaining pasta, spinach mixture, Wolfgang Puck’s Four Cheese Sauce and Parmesan cheese.  (At this point, the lasagna needs to be refrigerated for 30 minutes before you are ready to bake them.)

Bake until the cheese has melted and the lasagna is nicely browned, about 20 to 25 minutes.

In a medium sauce pot, heat the remaining Wolfgang Puck’s Four Cheese Sauce and pour generously over pieces of lasagna once served.
