One of the things I love most about being a blogger (aside from meeting awesome people and making new friends) is the great information that companies submit to me on a daily basis. I truly enjoy sharing some of the great things that come my way with my readers.
I received an e-mail from www.ChileanFruitOnline.com with some delicious recipes. One of the recipes really stood out – Fresh Blueberry and Cranberry Relish. With this being the holiday season I’m sure there will be plenty of holiday dinners being prepared all month long. Instead of traditional relish or cranberry sauce, may you’ll want to mix it up a bit and try this recipe.
Fresh Blueberry and Cranberry Relish
Makes 12 1/4-cup servings
Ingredients:
1 cup fresh Chilean blueberries
1 cup fresh orange juice
8 ounces fresh cranberries
1 tablespoon orange zest
3/4 cup sugar
1 teaspoon vanilla
Directions:
Combine all ingredients in a medium saucepan over medium heat. Cook until the sugar dissolves and the berries soften, about 15 minutes. Remove from heat, cover and chill. Best made in advance to let flavors blend.

I love to add blueberries to pancakes and waffle mix, yogurt, cereal, oatmeal, fruit salad and on ice cream. They are great on their own too.

I make my cranberry relish with thawed frozen cherries and a can of crushed pineapple mixed in with canned whole cranberry sauce, blueberries would probably be good in it too

Kimberly, my sister makes this also as a jello salad and it’s SO good! I am not one for Jello but over half of it is fruit so it is not overpowered by sugar. Gets the kids to eat some of those nutrient laden fruits!
