Are you a fan of eggs? If so, what is your favorite way to enjoy them?
My family uses a lot of eggs during the week, for meals as well as in recipes.
One of my family’s favorite dinners is pepper and eggs on a hard roll. I simply cut up some green peppers, sautee them in a pan until they are just about to get soft, then mix in some eggs (pre-mixed with a little milk or water). I move the egg and pepper mixture around until its fully cooked (scrambled eggs). We spoon some of the mixture on hard rolls (or hamburger rolls) and enjoy.
Mmm… I’m craving that right now!
In honor of National Egg Day I made one of my all time favorite egg dishes. My mom used to make it for me when I was younger. She referred to it as an “egg in a basket.” I’m sure it goes by other names too.
Here is my recipe.
Ingredients:
- Egg
- Slice of bread
- Butter
Directions:
- Butter both sides of the bread.
- Using a small glass (like a juice glass) make a hole in the center of the bread and remove the piece you cut out.
- Place the bread in a non-stick pan like the 10″ Calphalon Classic Nonstick Fry Pan that I used.
- Crack ope the egg and carefully pour it into the hole in the middle of the bread.
- Cook for a few minutes on medium heat until you see the egg white start to turn white.
- Using a spatula carefully flip the bread/egg over and then cook it for a minute or two longer (you want the inside to still be liquid).
- Remove from the pan and place on a plate and enjoy! If done correctly the inside of the egg will still be liquid (like a soft boiled egg). You can use the bread to soak up the liquid as you eat it.
- As a bonus you can also cook the circle you cut out from the bread for an added treat.
This is SO GOOD! I make this often for me and my family. It’s so easy to make too.
Another great egg dish is a breakfast sandwich. You just need a small pan (Calphalon’s 8″ Nonstick Fry Pan is a great choice), an egg, cheese and a toasted English Muffin. Simply fry an egg (crack it open in the pan, cook a few minutes until the egg whites turn white, flip it for another minute or two – you want the middle to be liquid). Put it on a toasted English Muffin, top it with cheese and enjoy. Of course you can add other toppings too (bacon, ham, mushrooms…).
Calphalon was kind enough to send me new fry pans to whip up my egg recipes with. I received a 10″ and 8″ pan. The smaller pan is ideal for making a single fried egg. It’s the perfect size for it. It’s also ideal for an individual omelet or scrambled eggs for one.
The 10″ pan is a bit more generous in size. You could easily fit a few fried egg in it, or two “Eggs in a Basket.” You could also use it to make an omelet or scrambled eggs for two people. It can also be used for another breakfast favorite of ours – pancakes!
I love the way these pans look. They have really nice handles. I also appreciate the tall sides.
The best part is that these pans are non-stick. For me, having non-stick pans are a must. I don’t want to have to add butter or oil to my recipes just to make them not stick to the pan. I’m also not a fan of non-stick sprays (I try to limit the amount of spray products in my home due to our asthmatic cat and because it’s harmful to the environment).
I have other non-stick pans which are not 100% non-stick. So far I have not had an issue with the Calphalon pans and sticking. So far they are the best non-stick pans I own.
Clean up is a breeze.
I also appreciate that these pans are lightweight. I suffer from Carpal Tunnel and sometimes my right wrist hurts (I’m right handed). These pans are light enough that I shouldn’t have a problem using them when my Carpal kicks in.
