Healthy Halloween Recipes from Weelicious.com’s Catherine McCord

I get such a kick out of the creative things people can do with foods and beverages, especially around the holidays. I’m amazed at how just tweaking a recipe a little bit you can turn an ordinary meal into some thing festive and fun.

Halloween is usually associated with candy (LOTS of it!) causing kids (ands some adults ) to have junk food overload and sugar highs. Its fine to let kids have Halloween treats, within reason.

You can offer your family tasty treats for Halloween that are a healthier option then bowls full of candy. Catherine McCord, from Weelicious.com, has some fun, easy and healthy Halloween treats you can make for your family and friends this year.

Instead of filling kids with refined sugary treats and processed foods this Halloween, try one of Catherine’s good-for-you fun creations.

Sinking Bugs Cheese Dip: This healthy nacho dip is a cinch – just add black beans to appear as the sinking bugs!  

2 Tbsp Butter
2 Tbsp Flour
2 Cups Whole Milk
2 Cups Cheddar Cheese, grated (8 oz cheese)
1 15 oz Can Black Beans, rinsed and drained
Tortilla Chips

1. Stir the butter and flour in a saucepan over medium heat, stirring continuously for about 1 minute or until bubbly and golden.

2. Slowly add the milk, whisking continuously and bring to a boil.

3. Simmer on low to medium heat for 10 minutes or until the mixture thickens (it should coat the back of a wooden spoon).

4. Turn off the heat, continue to stir for another minute to cool then add the cheese and stir until melted.

5. Stir in the black beans.

6. Serve with tortilla chips. 

*This dip should be served warm as it solidifies when it gets cold. Reheat this dip in a sauce pan over low heat till it is warm.

Spider Web Pizza: Top your pizza with black olive tapenade and mozzarella. Then run a toothpick through to make it look like a web covered with spiders.

1 Lb Pizza Dough (white or whole wheat (from the grocery, a pizzeria or Trader Joes) or weelicious whole wheat dough
1 Cup Olive Tapenade or Wee Tapenade
1 Cup Mozzarella Cheese, grated or shredded

1. Preheat oven to 450 degrees.

2. If using prepared dough, leave the dough on the counter until at room temperature.

3. Cut the dough into four equal pieces and using your hands, shape into individual pizza circles.

4. Place on a parchment or Silpat-lined baking sheet and cover each pizza with black olive tapenade.

5. Using the mozzarella cheese, create a “web” on top of the pizza (see picture above).

6. Bake for 15-18 minutes.

7. Serve.

Freaky Franks: The trick with these is to poke uncooked spaghetti into sliced hot dogs, then boil it all together and put into tomato sauce. 

Whole Wheat Spaghetti (I used 1/2 package)
Hot Dogs (I used Veggie Smart Dogs)
Weelicious Tomato Sauce or Any Jarred Sauce

1. Bring a large pot of lightly salted water to a boil.

2. Cut each hot dog link into 4 even pieces.

3. Line the spaghetti up and break in half into 4 inch pieces.

4. Poke the spaghetti pieces through the pieces of hot dog lengthwise.

5. Place the “Freaky Franks” in boiling water and cook for 10-11 minutes and drain.

6. Serve with tomato sauce. 

Pumpkin Cheesecake: This cheesecake is sweet, creamy and super easy to make with only 6 ingredients!

8 oz Cream Cheese, softened (I softened mine on a plate for 20 seconds in the microwave)
1 15 oz Can Pumpkin Puree
2 Eggs
1 Tsp Cinnamon
1/4 Tsp Nutmeg
1/2 Cup Agave 

1. Preheat oven to 400 degrees.

2. In a mixer or in a bowl with beaters, beat the cream cheese until creamy and smooth.

3. Add the pumpkin and mix until smooth and combined.

4. Add the eggs one at a time and beat until combined.

5. Add the remaining ingredients and combine.

6. Pour into 8 ramekins and fill 3/4 full.

7. Bake for 25 minutes.

8. Serve.
