About a month ago I was asked if I wanted to participate in Kraft Huddle to Fight Hunger campaign. What I liked most about the campaign (aside from helping to bring awareness to the plight of hungry people everywhere) was the fact that 1,000 meals would be donated each time I shared some recipes with my readers using Kraft products (up to 4,000 meals). There was no way I was going to pass on that. I love knowing that I can do something to help others.
Ideally I should have created my own recipes, which I did in the beginning. After my second post my mind went blank, so I referred to recipes found on the Kraft website (www.KraftRecipes.com).
Last week’s recipes turned out great. This week’s recipes, although delicious, didn’t exactly look too yummy. We followed both recipes exactly except my kids took the liberty of tweaking one of the recipes and I think that is why in the end it didn’t look so good (BUT they did taste good).
Wrapped Up Dogs
Ingredients:
One package of Oscar Meyer Hot Dogs (I use their Turkey Hot Dogs – less fat), cooked
1 1/4th cup of Refried Beans, warmed
10 Kraft Cheese Singles
2/3 cup of Salsa
10 Flour Tortillas, warmed
Directions:
Take a heated Tortilla and spoon about 2 tbs. of warmed Refried Beans on to it. Next top it with a Kraft Cheese Single, 1 Oscar Meyer Hot Dog and about 1 tbs. of Salsa.
After you have arranged the ingredients roll up the Tortilla in a paper towel. Place 5 at a time on a microwave safe plate and microwave for about one minute until the cheese is melted.
Unwrap and enjoy!
Above this recipe is the photo found on the Kraft website. Below is my photo. Mine doesn’t look as nice. 🙁 However it DOES taste really good. The kids loved it. My husband was totally grossed out and wouldn’t try one. His loss. They were good.
The only thing I think I would change for next time it use spicier salsa. I used a very mild salsa and I think this recipe could use more of a “kick” with a spicier salsa.
The next recipe we tried did not turn out at all like the original recipe. The kids wanted to help me with this one. They saw me with the Jett Puffed Marshmallow Cream and knew I had to be making something yummy. The kid are hooked on the cream. They use that with Nutella to make sandwiches. Eww! Sweetness overload. Ha Ha.
Here is the recipe we made.
Peanut Butter Ritz Squares
Ingredients:
1 cup of Jet Puffed Marshmallow Cream
1 cup of Planters Crunchy Peanut Butter (can also use creamy peanut butter)
1/2 of a cup of Semi-Sweet Chocolate Chips
36 (approx. one sleeve) of Ritz Crackers crushed up (makes about 1 – 1 1/2 cups)
1 square of Bakers Semi Sweet Chocolate, melted (optional).
Directions:
Mix together the Marshmallow Cream and Peanut Butter until well blended. Stir in the Chocolate Chips and Ritz cracker crumbs and stir everything together.
Take the mixture and press it lightly into a square 9″ pan coated with cooking spray. Drizzle with melted chocolate if you desire.
Let stand at room temperature for about a half hour before cutting it into squares.
I don’t have a 9″ pan. While I was looking for a substitute my kids had the brilliant idea of rolling the “dough” into balls instead. I figured it was fin. It shouldn’t effect how the recipe tasted, only how it looked. It DID taste good – but visually they looked horrible. The kids didn’t seem to mind but me and my husband were sort of put off by how they looked (my husband didn’t want to try them either).

Oh well. At least the kids are eating them so I know they are not going to waste.
Even if not all of my recipes turned out perfectly, I know in my heart that my attempts are still going to provide food for hungry people.
