I have done a couple of posts about Kraft’s Huddle to Fight Hunger campaign so far. Not only have I been fortunate to share a great program with my readers but I’ve also shared some recipes too.

I’d like to share a couple of more recipes with my readers. This time they are for delicious desserts, One is super quick and easy. The other takes a little more time but will disappear quickly because they taste so good.
Two Minute Tiramisu
Ingredients:
2 tsp. of Maxwell House International Café Sugar Free Suisse Mocha.
2 cups of Jell-O Vanilla Sugar Free Pudding Snacks
1 package of Nabisco 100 Calorie Lorna Doone Shortbread Cookie Crisps
Cool Whip Sugar Free Whipped Topping
Directions:
Empty the two pudding cups into a bowl.
Stir the Maxwell House International Café Sugar Free Suisse Mocha.
Divide into two dessert bowls.
Top with a dollop of Cool Whip and a few Lorna Doone Shortbread Crisps.
This recipe was incredibly easy and make in about a minute. You can’t beat that. Plus it tasted great! So much so my kids keep asking me to make it.
I had asked my husband to pick up the Nabisco 100 Calorie Lorna Doone Shortbread Cookie Crisps for me one afternoon when he stopped for bread on his way home from work. He came home with OTHER shortbread cookies. He said the ones he picked up where on sale and the Lorna Doone were not. I can’t fault him for being a smart shopper. At the same time my recipe doesn’t look the way it should. It SHOULD have the Lorna Doone Shortbread Crisps on top.
I also don’t have any fancy dessert dishes so I had use a cereal bowl. 🙂
Here is another great tasting recipe, if you don’t mind getting a little sticky.
Chef Guy Fieri’s Ritz Half Moons
Ingredients:
24 Ritz Crackers
1/2 cup of Jet Puffed Marshmallow Creme
1/3 cup of Planters Creamy Peanut Butter
1 package of Baker’s Semi-Sweet Chocolate (8 squares) – melted
2 Tbsp. Planters Lightly Salted Dry Roasted Peanuts, chopped – optional
Directions:
Lay 12 Ritz Crackers down on a cookie sheet covered in wax paper.
Put the Marshmallow Creme and Peanut butter in a microwave safe bowl. Microwave for 15-20 seconds. Remove from the microwave and stir.
Take a large Ziploc bag and scoop the Marshmallow/Peanut Butter mixture into it (this can be messy). Once the mixture is int he bag seal it off and then cut off one corner.
Take the bag of Marshmallow/Peanut Butter and squeeze some on to each Ritz cracker, approximately 1 Tbsp.
Top with another Ritz Cracker and lightly press until the Marshmallow/Peanut Butter mixture comes to the ends without squeezing out.
Next dip one side of the Ritz Cracker “sandwich” into the melted chocolate and lay back down on the wax paper. Sprinkle with chopped peanuts if you desire or another topping (another chopped nuts or sprinkles).
These tasted great, although they didn’t look that appealing. I didn’t have the nerve to chop up the nuts. I’m accident prone and Ididn’t want to cut my finger by accident. So we left the nuts whole. That was a mistake. They really need to be chipped.
I also didn’t put enough of the filling on to each cracker. I should have put a lot more. When we sandwiched another cracker on top there was barely any filling in between.
By the way, Marshmallow and Peanut Butter mixed together tastes SO GOOD!

They also have a fun game set up called “2-Minute Trivia Drill”. It’s a fun trivia game. It consists of easy random trivia questions. For every question you get right another meal will be donated to Feeding America. So if you get 5 points, 5 meals will be donated. Or if you get 20 points, 20 meals will be donated. The trivia questions are pretty easy for the most part. The last time I played I got 50 points which means that 50 meals were donated.
