I used to love milk. I still do. Sadly milk doesn’t like me anymore.
I had surgery back in 92′ and as a result I became lactose intolerant. I can eat aged cheeses, some ice cream (only a spoon full or two) and some yogurts. I can’t enjoy a tall glass of ice cold milk, chocolate milk, many creams and whipped toppings. Well I could enjoy them – momentarily. Then I’ll have to spend the next several hours with severe stomach cramps. It doesn’t sounds worth it, but sometimes I will take that chance just to enjoy something, like ice cream cake. In fact I had ice cream cake (just a little) on Sunday. It was worth a few stomach cramps. LOL!
I’m fortunate that I can bake and cook with milk with most recipes. Some recipes I can’t. I know others who are lactose intolerant that had to give up all their favorite recipes because of their sensitivity to lactose. Either that or they have a family member who cannot tolerate dairy.
Oh what I wouldn’t give for a great big glass of ice cold milk. 🙂
You CAN cook and bake with dairy and enjoy all the yummy goodness without having to deal with stomach cramps and other unpleasant side effects of having dairy when you are lactose intolerant. Simply swap out the milk in the recipes with Lactaid.
You can cook and bake with Lactaid. Recipes turn out just as good as they would with regular milk, minus the lactose.
I’m not much of a baker. I don’t bake much. But I do cook and I do enjoy things like Smoothies.
One thing I used to enjoy when I was younger was Orange Julius. I don’t even know if they are still around.
An Orange Julius was a combination of milk, orange juice and sugar. It might sound gross to some but it tasted just like a creamsicle. I used to buy them every time I went to the mall. My mom figured out a way to make them at home. She used two parts milk, one part orange juice and a smidgen of sugar. I used to add a wee bit more OJ into the drink when I made it. Put all the ingredients in the blender, blend I up and serve over ice. Mmmm…. GOOD!
I have not had an Orange Julius in 25+ years. Nor have I made any from home. I decided to try and make one using Lactaid instead of milk. I put a cup of Lactaid in the blender along with a 1/2 cups of Orange Juice and a pinch of sugar (probably nor more than 1/4th of a teaspoon. I mixed it up and poured it over ice. Mmm! It was just as good as I remembered.
Lactaid tends to be a wee bit sweeter than regular dairy. When I made the Orange Julius again for my kids I omitted the sugar and it still tasted just as good.

Did you happen to catch Melissa d’Arabian’s, spokesperson for Lactaid, on the TODAY Show this morning (June 25, 2013)? She made a quick and easy Chicken with Lactose-Free Creamy Mushroom Sauce. It sounds complicated but it can be whipped up quickly and it looks so good! Too bad my family won’t eat mushrooms (I’m the only mushroom lover in my home) or else I would make it for my family.

Luckily I’m not lactose intolerant. I was wondering if soy or almond milk can be used in place of regular milk?

I am lactose intolerant and I have Lactaid milk every day with my cereal. I couldn’t live without it.

I have family members lactose intolerant, it can be something for older ppl, too. Altho some people can get better by having a tiny amount of lactose every day and build back up (not everyone). That orange julius sounds good! I like making my own ice cream, and often make it with no dairy – use cashew butter, etc. It’s good and you wouldn’t know it has no dairy – altho the ppl I know who are lactose intolerant use Lactaid!

I didn’t used to be lactose intolerant, but I read that after childhood we aren’t made to drink milk so some of us become intolerant. Lactaid is great because I still want my ice cream and milk in my coffee!

I have heard of this but didn’t realize that you could use it in cooking. I am so sorry that you are intolerant, but isn’t it wonderful that something like this is available? Can you eat frozen yogurt? My sis is somewhat intolerant, but frozen yogurt doesn’t bother her. This will be passed on to her! Thanks!

My husband takes a lactaid pill before he eats anything dairy and it really makes a difference!

My sister has used this for her granddaughter who is lactose intolerant. I feel so bad for you that you also have this issue. I love so many dairy products that I’d somehow be lost and mentioning ice cream cake…I would have had to have the cramps as well

I have a niece who is lactose intolerant. She drinks soy milk. I had an Orange Julius the other day. My kids had no idea what it was but they liked it.
