Tomorrow is Cinco de Mayo, The date commemorates the Mexican army’s unlikely victory over French forces at the Battle of Puebla on May 5, 1862.
Here in the United States, most people don’t celebrate that monumentous victory. They rather eat and enjoy Mexican cuisine. I suppose that is OK. I certainly don’t mind tacos from time to time. Maybe I’ll make Spaghetti Tacos for dinner tomorrow night.

Essentially most people see Cinco de Mayo as the opportunity to eat, drink and be merry.
A staple for any Cinco de Mayo celebration is guacamole.
I have never made guacamole on my own. I have only enjoyed it at restaurants or pre-made from the grocery store. I honestly assumed it was too much work to make it on my own. WOW! Was I sure wrong.

It was so good that I almost ate the entire bowl of guacamole myself.
